Marcia's Famous Cookes!

Tim is in LOVE with Marcia's cookies (I am too, but he begs for them!) She was kind enough to give me the recipe, both for one batch and for the industrial batch, which she makes and then freezes for a quick treat when guests come over. ( The industrial sizes are in bold)

Kitchen Industrial

All Purpose Flour
  • 2 1/4 cups
  • 9 cups
Baking Soda
  • 1 teaspoon
  • 4 teaspoons
Salt
  • 1 teaspoon
  • 4 teaspoons
Butter (softened)
  • 1 cup
  • 4 cups (microwave to soften)
  • Marcia uses butter flavored Crisco
Granulated Sugar
  • 3/4 cup
  • 3 cups
light brown sugar, packed
  • 3/4 cup
  • 3 cups
Large Eggs
  • 2
  • 8
Vanilla
  • 1 teaspoon
  • 4 teaspoons
Semisweet choc. chips
  • 2 cups
  • 8 cups
Peanut Butter
  • 3/4 - 1 cup
  • 2 cups

Preheat oven to 375 degrees.
In bowl, combine flour, baking soda, and salt. Set aside. In large bowl, cream butter, sugar and brown sugar. Beat in eggs and vanilla. Gradually add dry ingredients until blended. Stir in chocolate chips.

Drop by well rounded teaspoons onto ungreased cookie sheets. Bake 8-10 mins. Cool cookies on rack.

Taco Pizza

  • 1 1/4 cups corn meal
  • 1 1/4 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons salt
  • 2/3 cup milk
  • 1/3 cup utter, melted
  • 1/2 lb ground beef
  • 1/2 lb pork sausage
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can tomato paste
  • 1 envelope taco seasoning
  • 3/4 cup water
  • 1 1/2 cup shredded cheddar cheese
  • 1 cup shredded monterray jack cheese
  • 2 cups chopped lettuce
  • 1 cup diced fresh tomato
  • 1/2 cup sliced ripe olives
  • 1/2 cup sliced green onions

In medium bowl, combine the corn meal, flour, baking powder, and salt. Add milk and butter. Mix well. Press onto the bottom and sides of a 12 x 14 pizza pan. Bake at 400 degrees for 10 min or until edges are browned. Cool. In a large skillet brown beef and sausage, drain. Stir in the tomato paste, canned tomatoes, taco seasoning and water. Bring to boil and simmer uncovered for 5 mins. Spread over crust. Combine cheeses, sprinkle 2 cups over the meat layer. Bake at 400 degrees for 15 minutes until the cheese melts. Top with lettuce, tomato, olives, onions and remaining cheese.

Spaghetti Pizza

Pizza:
  • 1 (16oz) pkg spaghetti, broken into 2 inch pieces
  • 2 eggs, beaten lightly
  • 1/2 cup milk
  • 1/2 tsp. salt
  • 1 cup shredded mozzarella cheese
  • 3/4 tsp garlic powder

Sauce:
  • 2 (16oz) jars spaghetti sauce
  • 1 1/2 tsp oregano
  • 3 cups shredded mozzarella cheese
  • 1 (3 1/2 oz) pkg pepperoni or browned hamburger

Cook and drain spaghetti. stir in eggs, milk, salt, cheese and garlic powder. Press into greased 10 x 15 in pan and bake at 400 degrees for 15 mins. Spread sauce over crust. Sprinkle oregano and cheese over sauce. Spread pepperoni or hamburger over cheese. Bake at 350 degrees for 30 mins. Let cool 5 mins before cutting.

Marcia's Homemade Meat Balls

I've had these at Marcia's house before and they are very yummy! I've never attempted them on my own, but I'm going to soon, so that I can freeze them and have them on hand and ready! :)

Meat Mixture:
  • 3 lbs ground beef
  • 1 can (12 oz) evaporated milk
  • 1 cup oatmeal
  • 1 cup cracker crumbs
  • 2 eggs
  • 1/2 cup chopped onion
  • 1/2 teaspoon garlic powder
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 2 teaspoons chili powder

Sauce:
  • 2 cups catsup
  • 1 cup brown sugar
  • 1/2 teaspoon liquid smoke
  • 1/2 teaspoon garlic powder
  • 1/4 cup chopped onion

Combine all ingredients (mixture will be soft) and shape. Layer on waxed paper. Freeze until solid. Store frozen meatballs in freezer bags.
To make sauce - combine all ingredients and stir until sugar is dissolved. Place frozen meatballs in 13x9x2 in pan. Pour on the sauce. Bake at 350 degrees for 1 hour - yields 80 meatballs.

Baked Corn

This was absolutelly one of the best recipes I've had in a LOOOOOONNNGGG time! Marcia is my BF's mom, and I've long admired her cooking/baking skills. When we had dinner there Monday night, she made this as a side, and it was a huge hit. And so easy to make! yummmm! She also shared many of her favorite reicpes with me and I'm SO excited to try them out! Keep on the look out for more posts tagged "From Marcia's kitchen" :)

Baked Corn

  • 1 can whole corn
  • 1 can cream style corn
  • 1 cup diced cheese (velvetta)
  • 1 cup broken raw spaghetti
  • 1/2 cup butter, melted
Mix together both corns, cheese, spaghetti and butter. Put in large pan and bake uncovered 1 hour at 350 degrees.
