Easy Mac & Cheese

Amazing three-ingredient macaroni bake

When the temperature dips, warm your heart with good old mac 'n' cheese. We guarantee that this recipe will be one of the easiest and creamiest you've ever made.

Ingredients

  • 3 cups (750 mL) uncooked elbow macaroni
  • 10 oz (284 mL) can undiluted condensed cream of mushroom soup
  • 1 3/4 cups (425 mL) grated old cheddar or 200-g pkg of shredded mix of cheeses

  1. Preheat oven to 400F (200C). To cook pasta, bring a large saucepan of water to a boil. Once water boils, add pasta. Boil, stirring occasionally, until al dente, about 10 minutes. Meanwhile, scrape contents of can of soup into an 8-cup (2-L) casserole dish. Place dish, uncovered, in preheated oven. Bake just until soup is hot and bubbly, 12 to 15 minutes.
  2. Drain cooked pasta well. Remove casserole dish from oven. Stir cheese into hot soup until almost melted. Stir in pasta until coated. Mac 'n' cheese is good at this point, but for a fuller flavour, cover and continue baking, about 20 more minutes.
  • Make it your own

    Before baking casserole, stir in frozen green peas or chopped hot peppers. For a crunchy topping, mix crushed croutons with grated cheese or liberally sprinkle seasoned bread crumbs overtop. Then bake, uncovered, until top is golden, from 20 to 25 minutes. Serve immediately.

Overnight Rotini Bake


  • 1 1/2pounds lean ground beef
    1large onion, chopped (1 cup)
    1large bell pepper, chopped (1 cup)
    2large cloves garlic, finely chopped
    1can (28 ounces) crushed tomatoes, undrained
    2cups hot water
    1envelope (1 ounce) onion soup mix (from 2-ounce package)
    1teaspoon Italian seasoning
    3cups uncooked rotini or fusilli (corkscrew) pasta (9 ounces)
    1 1/2cups shredded Italian cheese blend or mozzarella cheese (6 ounces)

Spray rectangular baking dish, 13x9x2 inches, with cooking spray.

Cook beef, onion, bell pepper and garlic in 4-quart Dutch oven over medium-high heat, stirring occasionally, until beef is brown; drain. Stir in tomatoes, water, soup mix (dry), Italian seasoning and pasta. Spoon into baking dish.

Cover tightly with aluminum foil and refrigerate at least 8 hours but no longer than 24 hours.

Heat oven to 375°. Bake covered 45 minutes. Sprinkle with cheese. Bake uncovered about 10 minutes or until cheese is melted and casserole is bubbly.

Dutch Oven Cobbler

  • 2 quarts of fresh fruit of your choice (or canned fruit/filling)
  • 1/2 cup lemon juice
  • 1/4 teaspoon salt
  • 2 cups sugar
  • 1 box Jiffy Yellow Cake mix
  • 1 stick (1/2 cup) butter
  • 1 cup nuts (optional, should be chopped)
Spread the berries in a greased dutch oven pan. Mix the lemomn juice, salt and sugar together. Pour over the berries. Sprinkle the cake mix evenly over the top and dot with the butter. Bake at 350 degrees for 30 mins.

Cheesey Noodle Casserole (dutch oven style)

  • 1 pkg (7 or 8 oz) noodles, cooked
  • 1 lb ground beef
  • 1 onion chopped
  • 1 tablespoon margarine
  • 1 teaspoon salt
  • 1/4 teaspoon garlic salt
  • 1/8 teaspoon pepper
  • 2, 8oz cans of tomato sauce
  • 1 cup cottage cheese
  • 1 cup sour cream
  • 1 cup shredded cheese
Drain the cooked noodles. Brown the beef with the onions using the margarine. Add salt, garlic salt, pepper, and tomato sauce. Layer the noodles, beef, cottage cheese, and sour cream in a greased dutch oven. Top with shredded cheese and bake at 350 for 20 to 30 mins.

Dutch Oven Baked Potatoes

  • 4-5 large potatoes
  • Margarine/butter
Place potatoes in dutch oven, cutting a cross in the top of each potato. Place a tab of margarine on each potato at the cross . Cover and bake in dutch oven at 350 degrees for 1 to 1 1/4 hours.

Ham and Potato Bake (dutch oven)

  • 15 oz frozen shredded potatoes, thawed
  • 1 cup diced extra lean ham
  • 1 10oz can cream of mushroom soup
Combine all ingredients and bake at 350 for 30 minutes in a dutch oven

Easy Dutch Oven Meatloaf

  • 2 lbs ground beef
  • 1 can evaporate milk or 1/2 cup milk
  • 2 pkgs dried onion soup mix
Mix all the ingredients together to form a loaf. Put loaf in dutch oven and bake at 350 degrees for 50 to 60 mins.

Tuna Noodle Casserole (dutch oven)

  • 2 cans tuna
  • 1 can cream of mushroom soup
  • 1 pkg ( 6oz) egg noddles, cooked and drained
  • 1/2 cup grated cheese
Stir together the soup and tuna. Pour half the noodles into the dutch oven. Add have the tuna mixture; then pour remaining noodles and tuna on top. Sprinkle with cheese. Bake 20-30 minutes at 350 degrees, covered. Crack open the lid of the oven and bake an additional 15 mins until light brown.

Dutch Oven Bread

THE BREAD (from Pastor Ryan via The Pioneer Woman)

This is the basic gist of what we had the other night:

20 oz. of bread flour (all purpose is okay, too) – about 4 cups.
8 oz. of water (or 1 cup.)
4 oz. melted butter with chopped herbs of choice. We had chives. Rosemary or Thyme would work really well.
2 teaspoons salt
1 teaspoon active or instant yeast. (if active, it would be best to sprinkle yeast over the water to let it start to work before mixing it in)

I combined these ingredients all together in the KitchenAid stand mixer with the dough hook (it can be done by hand…it just takes longer).
I mixed them together for about 10 minutes or so until I could successfully achieve a windowpane with the dough. This is where you can pull off a small chunk of the dough you’re kneading and stretch it gently to see if it is somewhat translucent. If you can do this without it tearing, it’s ready.

Once this elasticity has been achieved, the dough can sit out with plastic wrap over it for 1-4 hours to double in size. After it’s gotten bigger, it should be kneaded for a minute or two so that the yeast can redistribute.

Preheat oven to 450 degrees.

Cut a large ‘X’ into the surface of the bread dough so it can bloom!

Bake inside a covered cast iron pan after coating the rounded dough with olive oil and sprinkling with kosher salt. Bake for 30 minutes with the lid on, then remove lid to finish it off for another 15 to 30 minutes.

If you like to use a thermometers, we’re looking for an internal temp. of around 200-210 degrees. (The bread can get brown on the bottom if it’s too close to the heating element; if that happens, just slice it off with a sharp knife.

PW's Buttered Rosmary Rolls

I found this on a favorite site of mine (The Pioneer Woman), and since we're new Iron-Skillet owners I think we'll give it a try.

Ingredients
  • Frozen, Unbaked Dinner Rolls
  • Melted Butter, Regular, Salted
  • Fresh Rosemary, Coarsely Chopped
  • Coarse Sea Salt
Preparation Instructions

Spray a small iron skillet with cooking spray (or coat with olive oil). Place frozen rolls in the skillet, leaving plenty of room for rising. Cover and allow to rise for several hours.

After rising, brush rolls with melted butter.

Sprinkle on chopped rosemary. Brush with additional butter.
Sprinkle with coarse sea salt.

Bake according to roll package directions (usually 400 degrees for 15 to 20 minutes), until rolls are a deep golden brown on top.

Serve skillet on the table.
