Texas Caviar


I had this at the school Potluck last night, and got the recipe from our school secretary. The ingredients sound a bit crazy, but its VERY yummy. It's also very sweet tasting :)

Oh, and she served it with those Tostito scoops pictured above.

Texas Caviar

Combine:
  • 1/2 cup oil
  • 3/4 cup Apple Cider Vinegar
  • 1 cup sugar
  • 1/2 Tsp. Pepper
Bring to boil for 2 min. Set aside.

Combine:
  • 1 can black eyed peas, drained and rinsed
  • 1 can pinto beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained and rinsed
  • 1 cup chopped celery
  • 1/2 to 1 cup chopped black olives
  • 1 cup chopped green onions
  • 1 small white onion, chopped
Add sauce and refrigerate. The longer it sets, the more flavorful it becomes. Enjoy!
