I tried this recipe for the first time on the 4th of July, and it was a hit! And VERY easy to make!
Mocha Cheesecake:
2 (8oz) pkgs cream cheese, softened
1/2 c. sugar
1/2 tsp. vanilla
2 eggs
4 squares (1 oz each) semi-sweet chocolate, melted
3 tbsp. black coffee
1 chocolate wafer crumb crust (I bought mine premade!)
Mix cream cheese, sugar, & vanilla at medium speed until well blended. Add eggs, mix well. Stir in Chocolate and Coffee. Pour into crust. Bake at 350 degrees for 40 mins. Cool - refrigerate 3 hours before serving. Garnish with chocolate shavings or fresh fruit.
